Easy and fun Chinese soup

Ahhh, funny Chinese soup. Delicious and easy to make.

Although Chinese restaurants seem to offer a wide variety of Chinese food in a very short time, this does not mean that preparing Chinese food is a quick job. On the contrary… making a full Chinese dinner at home is very time consuming. Restaurants are very fast because they have a lot of food and sauces prepared and ready to go. As a result, their professional cooks can really prepare dinners. Don’t expect the same at home.

Fun See Soup is one of the exceptions to the long brew rule. This delicate Chinese soup is quick to prepare and is sure to be a crowd pleaser.

FOR 8 SERVINGS

4 ounces rice noodles (That’s what Chinese “Fun See” is. If your supermarket doesn’t have this in their Asian food section, check out any Asian food market.)

1. Soak the above vermicelli rice noodles in cold water for 15 minutes, and then drain the water. Next, cut the noodles into 3″ pieces and set them aside.

4 14-ounce cans fat-free chicken broth

2 cans of chicken broth water

2. Put the previous chicken broth and water in a pot and bring to a boil.

2 cups thinly sliced ​​uncooked white chicken meat

2 teaspoons of salt

2 teaspoons cornstarch, blended with twice the water

3. While the chicken broth soaks, combine the above chicken, salt, and cornstarch mixture in a bowl. While the soup is boiling, stir the chicken and cornstarch mixture into the broth, making sure to separate the chicken pieces.

Cover the pot and bring it back to a boil.

6 egg whites, lightly beaten

Salt to taste

pepper to taste

4. Add the reserved rice noodles and egg whites from above, stirring as you add for several minutes. Turn off the heat immediately when you finish stirring.

Season the soup with salt and pepper to taste.

1 teaspoon sesame oil

1/2 cup finely chopped cooked Virginia ham

5. For the soup in a serving bowl, add the sesame oil above and sprinkle the ham on top.

Serve hot and enjoy.
