2 hot, hearty meals perfect for winter camping

If you’ve had the experience of winter camping, you know more than anyone how a hot, delicious meal can make a difference. But preparing and cooking food when it is snowing can be difficult work. You will have limited time and resources, so you should go for quick and easy recipes.

With these warm and hearty recipes for winter camping, flavor and convenience are not compromised yet they are quick and easy to prepare.

Hot ramen soup in a pot

What do you need:

  • 1/2 cup buckwheat soba noodles (or ramen noodles of your choice)

  • 4 pieces. Dried shiitake mushrooms

  • 1/2 cup dehydrated ground beef

  • 1/2 cup freeze dried vegetables of your choice

  • 1 tablespoon soy sauce

  • 1 teaspoon Sriracha

  • 1 teaspoon sesame oil

  • Salt to taste

Prepare all ingredients at home in advance for easy transportation and cooking at camp. At home, combine soy sauce, Sriracha, and sesame oil in a small container with a lid. Place the noodles, mushrooms, meat, and veggies in separate ziplocs.

When you’re ready to cook at camp, fill a pot with 2 cups of water. Add the noodles, mushrooms, and vegetables to the pot and bring to a boil. Cook until noodles are tender, about 5 minutes. Add ground beef and sauce and remove from heat.

Let cool for a couple of minutes before consuming.

Campfire Vegetarian Chili

What do you need:

  • 1 3/4 cup black beans

  • 1 3/4 cup kidney beans

  • 1 3/4 cup diced tomatoes

  • 1 can of chipotle peppers, seeded and cut into small pieces

  • 1 can (12 oz) beer

  • 1 onion, sliced

  • 1 tablespoon of oil

  • 1 teaspoon garlic powder

  • 1 teaspoon of cumin

  • 1 small avocado (for topping), peeled and sliced

  • Cheese (to cover)

  • Salt to taste

In a pot over a fire or grill, heat the oil and cook the onion for 5 minutes or until tender. Add the black beans, kidney beans, tomatoes, and beer. Season with garlic powder and cumin. Add the desired amount of chipotle peppers.

Cook the chili for 20-25 minutes over medium heat. When ready, remove from heat. Top with avocado chunks and cheese. Add salt if necessary.

Best served hot.
