6 tablespoons grated Parmesan cheese

3 tablespoons of flour

1 to 1 1/2 lbs. Fish fillets

3 tablespoons of butter

2 tablespoons chopped parsley

2 tablespoons chopped chives

  1. In a shallow dish, combine the cheese and flour.
  2. Dip the fish into the flour mixture, coating it on all sides.
  3. Heat butter in skillet and sauté fish in butter over medium heat until golden brown on all sides and fish flakes easily, about 4 to 6 minutes.
  4. Place the fish on a hot plate. For the butter in the pan over the fish. Sprinkle with parsley and chives. Garnish with lemon wedges or slices.
