Filipino Recipes – Longsilog (Breakfast) Recipe – Pinoy Food

Silogs, a popular term for sinangag (fried rice) and itlog (egg), are without a doubt everyone’s favorite morning pinoy meal. Due to its popularity, it can even be considered the national breakfast of the Philippines, if there is such a thing.

These morning treats come in various combinations with tapsilog (with a lid), tocilog (with bacon), and longsilog (with longanisa or Filipino sausage) topping the list. There are still many variations of silogs like cornsilog (with corned beef), chiksilog (with chicken), chosilog (with marinade), dangsilog (with danggit or rabbit fish), bangsilog (with bangus or milkfish), hotsilog (with hot dog) and many more.

But for this recipe we are going to prepare a combination of longanisa or the famous Pinoy sausage, sinangag or the tasty fried rice with garlic and eggs. Delicious! My mouth is already watering just thinking about it.

Ingredients:

  • 5 longanisa links
  • 3 eggs
  • 4 cups of rice left over from the night before
  • 1 cup of water to cook longanisa
  • ¼ tablespoon ground black pepper
  • 2 cloves of garlic
  • oil for frying
  • ½ tablespoon of salt
  • ¼ tablespoon of monosodium glutamate

Cooking procedure:

  • To cook the longanisa, place the longanisa in a pan along with the water and place over medium heat until it boils. Allow the water to evaporate completely until the oil begins to ooze from the sausages. To cook evenly, constantly roll the sausages and fry them for about 5 minutes.
  • For the eggs, beat two eggs as if you were preparing an omelette. Add a pinch of salt to taste and then cook in a pan. Remove from the pan and reserve. Get another egg and order the sunny side up. Cook using the same pan. Remove when done and reserve.
  • For the garlic fried rice, break up the rice, especially large pieces, and set aside. Put oil in a hot pan and cook the garlic until the color turns golden and the aroma is wafting through the air. Add the rice and stir for about 1 minute. Add the monosodium glutamate, salt, and pepper for added flavor. Cook for another 5 minutes stirring constantly to prevent the rice from burning.
  • Arrange the fried rice, longanisa and eggs in a bowl and serve hot.
